Challenging Myself

Lately I haven't been eating well. I've been eating out waaaay too much. I've been really good about bringing my lunch to work, but in the evening I haven't been good at all. I've been sucking bad. I've succumbed to fast food again. Ugh. Not a good thing. Oh and generally eating like crap. I'm really good at finding excuses too. I've worked all day, I'm exhausted, I deserve to eat out, etc.

So I've decided to challenge myself. Starting today, November 8, I am not going to eat out for at least a month. I'm going to eat all meals at home. No eating out. No wasting money. Being much healthier in the long run. I've done this before and I can do it again. It's going to be hard and suck, but I'm going to do it. I know I can.

So in order to help me out here, I'd love for you to share or link me to some of your favorite, easy, recipes.

Good day sweetie,
I know what you mean. I caught myself for the first time last week (after my 3rd working day) thinking...cooking?? Naahh,I worked and I am exhausted why dont get urself a take a way pizza or stuff like that. Well, I am a lover of all homemade food and I was like...was that MY thought?? I simply couldnt get it that the convenience-devil sneaked in and wanted to seduce me with crappy food. In a long way those food dont gives you the energy and vitamins you need after one hard day.
You know what I did as I stood in that supermarket? I turned and went back to the veggie corner and put all vegs in the basket and made myself a huge Stew. That was simply the best choice as it is the best and easiest meal to have on a fall evening and you have some leftovers for another day of you like.
So I recommend stews for you my love as they are healthy, they have lotsa vitamins in it and they sate and all fresh vegs n fruits make happy:)

Here I found a very good recipe site: http://www.stew-recipes.com/

Let me know how you liked those stews, if you choose to cook one. I like your idea and I am sure you will suceed,Amber. Only think from one evening Dinner to the next and you'll see in a few days your brain comes along with own ideas on it selves!:)
My thoughst are with you!!! Mucho love!!:)

My boyfriend's sister made this for us last week and it was amazing!! Plus, it cooks in the crock part, so less work. It was so good that even I am planning to try making it very soon.

She added double the mushrooms, which I would also do. If you try it, let me know.

We cook all sorts of stuff in the crockpot during the winter; soups, hamburger stew, sloppy joes, spaghetti sauce (so then all you would have to do is cook the noodles)... If you are too tired to cook you can't go wrong with good old grilled cheese! Maybe when you have the time you could maybe cook up a couple stuff to freeze so when you don't know what to make you can just thaw out whats in the freezer. Maybe sometime you can make a list to keep that you can go look @ when you don't know what to have. We also like making homemade pizza they have those pizza kits @ the grocery store you can buy to make the dough then put whatever you on for toppings.
